Ouzo

Ouzo, as opposed to tsipouro, is only partially distilled from grapes. It is an industrial mix of pure alcohol, water and herbal fragrances, mainly glykanise.

 

According to the law, for a product to be labelled as Ouzo, it must:

a) be produced in Greece (designation)
b) be flavoured by soaking or by distillation with glykanise seed. Optionally, fennel, mastic and other herbal spices may be used
c) the volume rate flavoured should be at least 20%. This does not mean that 20% comes from the distillation of grape marcs. It means that alcohol derives its herbal aroma through distillation.
